Now I've been making chocolate chip cookies since I was just a kid. I used to do what my mom does and use Crisco in place of butter or margarine in my cookies. This definitely results in a beautiful cookie, but I don't know, the taste just....? Yep, missing something. Then I married my husband and he just never could appreciate the Crisco chocolate chip cookie. I gradually started to experiment. I tried half Crisco, half butter or margarine. Ok, but still not.quite.there. Next I tried all margarine or butter. What I discovered is that I like using just butter - not margarine. Don't know what it is, it just tastes better.
The point of this post isn't just to discuss the ingredients. My main problem with the cookies was that a lot of them would go to waste because my family, like me, loves their cookies fresh. Soooo, this was my idea, I could refrigerate the cookie dough and then pull it out and make the 4-6 cookies we would eat, and they would be fresh! I mean, Nestle and Pillsbury do this, so I should be able to, right? I gave it a try, and guess what...it is AWESOME!
So this is what I do:
Mix together:
1 c. softened butter
3/4 c. granulated sugar
3/4 c. brown sugar
Sneak a taste, or two, or three. (This is my favorite part.)
Next add 2 eggs and 1 tsp. of vanilla.
After all of these ingredients are blended together, add the following:
1 tsp. baking soda
1/2 tsp. salt
2 1/4c. flour
Mix all of this together and then add a whole bag of chocolate chips.
I can't remember where this recipe originally came from. Maybe the Nestle chocolate chip bag? I then make a batch and stick the rest in a cheap plastic container and refrigerate.
Potential heaven. :)
Just make great little balls of dough and try not to eat it all.
Here is the finished product. They don't look bad, do they? Guess what? They are warm and ooey, gooey good! These were made from the refrigerated dough...not fresh.
Finally, two of my boys pigging down their cookies, while my husband tries to avoid the camera. I can now cheat and still give my kids fresh baked stuff and they don't know the difference. So there. I know, I know, you all have probably figured this trick out already, but don't tell me because I want to feel like the genius I know I can be.;) Bwahaha!
